INGREDIENTS
For Koftas:
- 2 cups Bottle Gourd (Lauki), peeled and grated
- 3 - 4 tablespoons All-purpose Flour (Maida)
- 1/4 teaspoon Garam Masala Powder
- 1/4 teaspoon Red Chilli Powder
- 1 Green Chilli, finely chopped
- Oil for deep or shallow frying the koftas
- For making masala paste:
- 1 teaspoon Cumin seeds (Jeera)
- 1/4 or 1/2 teaspoon of Red Chilli Powder
- 1/4 teaspoon Turmeric Powder
- 1 teaspoon Coriander Powder (Dhaniya Powder)
- 1/4 or 1/2 teaspoon Garam Masala
- 1 cup Water
- 1½ or 2 tablespoons Oil
- Salt as required
INSTRUCTIONS
- Start by squeezing the shredded lauki, collect the juice and keep it aside separately.
- Add maida, garam masala, red chilli powder and chopped green chilli to a deep bowl. Mix everything well and make small round balls of the whole mixture.
- Next, shallow or deep fry these balls till these turns golden brown in appearance. Pat the fried balls on tissue paper to remove excess oil.
- Now, add all the ingredients for masala to a bowl – red chilli powder, turmeric powder, coriander powder, garam masala along with a little water (if required). Make this into a smooth paste.
- Remove extra oil from the frying pan and just keep approximately 2 tablespoon oil. Toss in cumin seeds and let it crackle.
- Once the seeds start to crackle, add the masala paste and let it cook for good 8-10 minutes. Stir thoroughly, and cook till the sides starts to leave oil.
- Next, add the lauki juice, along with a cup of water to the mixture. Let it simmer for 10-12 minutes.
- In the end, add the fried lauki kofta and let it cook for a few minutes to absorb the flavours.
NOTES
Garnish with chopped coriander and relish it along with chapati or rice .
