It’s summer again – and what is exciting about the summer season is the abundance of fresh, delicious and healthy fruits that flock the market. And what is even more exciting is that these summer fruits are brimming with secret health benefits. However, the sweltering heat is known to kill our appetite. Scrumptious, heavy meals make you want to groan. What does seem appetising in the summer heat though, are crisp salads, nutritious smoothies, tangy coolers and fruit desserts. We’ve put together a few exciting and appetizing recipes for you to indulge in this season! Read on. They’re sure to make you want more.

 

Raw Mango Cooler

Popularly known as ‘Aam Panna’, this raw mango cooler is tangy and popular during the summers. It is a great remedy for heat stroke and dehydration, and packed with vitamins too.

 

Ingredients:

  • 3 Medium sized green raw mangoes
  • 1 cup sugar
  • 1 Tbspn roasted cumin powder
  • Black salt to taste
  • Salt to taste
  • 2 cups of water
  • 1 Tbspn Mint leaves
  • Crushed Ice

Preparation:

Pressure cook the mangoes with water till soft. Let them cool and then peel the mangoes. Grind the mango pulp with water. Add sugar to it and cook it on a slow flame, while stirring continuously. Once the sugar dissolves, remove it from the flame. Add salt, black salt and roasted cumin powder once it cools.

Take a tall glass, pour 1-2 tbspn of this mango concentrate and add cold water, crushed ice and mint leaves. You glass of raw mango cooler is ready!

 

Watermelon Feta Cheese Salad

 

Ingredients:

  • 400gms Sweet and juicy watermelon, cut in to cubes
  • 200gms Feta Cheese, cut in to cubes
  • 100gms Roquette leaves (Arugula Leaves)
  • 3 Tbspn Balsamic Vinegar
  • 2 Tbspn Olive Oil
  • Salt and pepper

Preparation:

Chill the watermelon for a few hours. Dice them in to cubes. Arrange the watermelon cubes, feta cheese cubes, roquette leaves on a large salad platter. Pour the balsamic vinegar, olive oil, salt and pepper and toss the salad.

Serve fresh and chilled.

Note: A salad should be eaten soon after the dressing is poured on it. If you leave a salad refrigerated with dressing mixed in it, it will not taste fresh and crisp.

Mango Pie

 

Ingredients:

  • 5 Alfonso Mangoes
  • 1 Cup Alfonso Mango pulp
  • 1 Cup fresh Cream
  • 8-10 Biscuits/Butter Cookies
  • 5 Tbspn Sugar

Preparation:

Take a big glass bowl. Crush or pound biscuits/cookies to make a fine uniform mix. Add 3 tbspn of sugar to the powdered biscuits. Now, spread it as the bottom most layer in the dessert bowl. Pour some fresh cream on top of this biscuit later. Cut the mangoes in to small cubes. Arrange the mango cubes and the fresh mango pulp above the layer of fresh cream. Pour the remaining cream on top of the mangoes; sprinkle some of the powdered biscuits on top of the cream. Decorate with mango slices and cream. Chill for a few hours.

Serve cold!
